There is something so warm & comforting in coming home to fresh, home-made banana bread :)  They started eating it before I could even take a picture... lol!

  • 2 cup packed brown sugar
  • 14 tablespoons vegetable oil
  • 4 large egg whites 
  • 2 large egg 
  • 4 large mashed bananas
  • 2 cup regular oats
  • 1 cup milk
  • 4 cups all-purpose flour
  • 2 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • Cooking spray
Preparation
  1. Preheat oven to 350°.
  2. Combine first 4 ingredients in a large bowl; beat well at medium speed of a mixer. Combine banana, oats, and milk; add to sugar mixture, beating well. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, salt, and cinnamon; stir with a whisk. Add to sugar mixture; beat just until moist. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

A school teacher injured his back and had to wear a plaster cast around the upper part of his body. It fit under his shirt and was not noticeable at all. On the first day of the term, still with the cast under his shirt, he found himself assigned to the toughest students in school.

Walking confidently into the rowdy classroom, he opened the window as wide as possible and then busied himself with desk work. When a strong breeze made his tie flap, he took the desk stapler and stapled the tie to his chest. He had no trouble with discipline that term.
 
 
 
 
Okay, so the last item I'm made yesterday are these cookies.
They need 4 hours for the dough to chill before they can be formed.

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 6 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 8 tablespoons butter, at room temperature
  • 1/4 cup butter-flavored Crisco shortening, at room temperature
  • 1/2 cup packed light brown or yellow sugar
  • 2/3 cup molasses
  • 1 large egg, at room temperature
Preparation
  1. 1. Whisk together flour, baking soda, spices and salt. In a large bowl, using an electric mixer on medium-high speed, cream butter and shortening. Add sugar and beat until fluffy, about 3 minutes. Beat in molasses and egg. Scrape sides of bowl, then stir in flour mixture to form a stiff dough. Divide dough in half. Form into 2 disks, wrap in plastic wrap and refrigerate for 4 hours or overnight.
  2. 2. Preheat oven to 350°F; line 2 large baking sheets with parchment. Roll out 1 disk of dough on a lightly floured surface to 1/8-inch thickness. Cut out cookies with a 3-inch cutter and place 1 inch apart on baking sheet. Gather scraps and reroll to form more cookies. Repeat with remaining dough.
  3. 3. Bake cookies for 10 to 12 minutes, switching sheets top to bottom and front to back halfway through. Let cool for 5 minutes on baking sheets on wire racks. Transfer cookies to racks to cool. Repeat with remaining cookies.
